Beets are a wonderful thing!
So far, in my research it appears that this red, sweet beauty packs a powerful punch for my upwards climb to good health. Beets can be incredibly beneficial for ridding our bodies of toxins. The betalains in beets have an affinity for the liver and help to move out toxins through the bloodstream. Not to mention that they are also anti-inflammatory which can help to promote cardiovascular health and many chronic illnesses.
I have to limit OTC medications, (I have taken nothing for aches of any kind since April 2021) so if something hurts, I have been seeking food remedies for aches, pains, and such. Beets appear to have the highest anti-inflammatory properties of all!
Nutritional researcher, Monica Reinagel, the creator of the IF (Inflammation Factor) Rating system has found beet greens to be strongly anti-inflammatory and gives them a rating of 274. In comparison, almonds have a rating of 56 and a carrot 60 so you can see how powerfully anti-inflammatory beet greens are! (Source - Chatelaine.com)
So I put beets on my grocery list and roasted them last night. They added a sweet and very RED addition to my mashup. I looked like I had murdered someone by the time I was done cooking. This is a good halloween root, if you want it to look like a horror show in the kitchen.
I also added fresh shaved ginger root tonight, Ginger root contains powerful compounds, including gingerols and shogaols, that help inhibit inflammation and protect against cellular damage, which may help support liver health. Plus, ginger may help protect your liver against toxins.
I tend to add ginger, turmeric and cinnamon spices to my meals (depending on flavors that I am seeking, to always have anti-inflammatories in my daily arsenal...but I am trying to also add the fresh roots to my meals whenever possible.
Red grapes are also in this meal, and studies show that grapes and grapeseed extract protect the liver from damage, increase antioxidant levels, and fight inflammation.
And tomatoes! Studies show that tomatoes are rich in lycopene -- a strong antioxidant, anti-inflammatory and anti-cancer agent -- which helps in effectively reducing fatty liver disease, inflammation and liver cancer development.

In short, my meals are my health and medicine in a colorful, tasty bowl.
This one proteined up with my sweeties' awesome home smoked chicken breast and a little feta cheese for fun.
I'm always on the hunt for new things to add to my meals to maximize healing.
